Epoxy, which expands at a very different rate, debonds under repeated thermal shock, and that is the failure we get called to replace more than any other in a food plant.
Second, its chemical resistance covers the organic acids that dominate this region: lactic from dairy, citric from citrus and tomato, tartaric from wine, acetic from fermentation, plus fats, sugars and the caustics used to clean them all off.
It is also unusually tolerant of moisture in the slab, which means it can often be installed where a high moisture vapor emission rate would otherwise force an expensive mitigation primer, and it can be placed on green concrete far sooner than an epoxy can.
That matters on a new build with a compressed schedule. It comes in self-leveling grades for smoother finishes and heavy-duty trowel grades with aggressive broadcast for wet areas where traction is a safety requirement. The honest trade-offs.
It costs more than epoxy per square foot, meaningfully so. The surface texture is more utilitarian than decorative, so it belongs in production areas rather than a tasting room. Color range is narrower.
And it demands an experienced crew, because a trowel-applied mortar with a short working window is not a forgiving material.
